What is Honey?

Honeybees are nature’s little chemists. Honeybees transform nectar into
honey by using enzymes and dehydration. Forager bees collect nectar in
their honey stomachs and add enzymes that break down sucrose into
glucose and fructose. They pass it to hive bees, who continue to process
the nectar for about 20 minutes. The nectar is then stored in the
honeycomb, where bees fan it until its water content drops to around 17%.
