Hot Honey

Equipment

  • Small saucepan

  • Measuring cups and spoons

  • Mesh strainer

  • Glass jars or an airtight container


Ingredients

  • 1 cup honey

  • 2 tablespoons red pepper flakes

  • 2-3 fresh chili peppers (such as habaneros, jalapeños, serranos, Fresno chilis, or Thai chilis), stems removed and thickly sliced

  • 2 teaspoons white wine vinegar

Instructions

  • Combine the honey, red pepper flakes, and sliced chili peppers in a small saucepan.

  • Cook over medium heat for 2-3 minutes, stirring occasionally, until small bubbles form at the edges of the pan.

  • Remove from the heat and let the mixture infuse for 5 minutes.

  • Add the white wine vinegar and stir to combine.

  • Strain the hot honey into a glass jar or airtight container, discarding the peppers and flakes. (Optional: To retain texture, scoop out only the pepper slices and leave the red pepper flakes in the honey.)

  • Allow the honey to cool; it will thicken as it cools but remain slightly looser than regular honey.

  • Store in a cool, dry place.
