Equipment
Small saucepan
Measuring cups and spoons
Mesh strainer
Glass jars or an airtight container
Ingredients
1 cup honey
2 tablespoons red pepper flakes
2-3 fresh chili peppers (such as habaneros, jalapeños, serranos, Fresno chilis, or Thai chilis), stems removed and thickly sliced
2 teaspoons white wine vinegar
Instructions
Combine the honey, red pepper flakes, and sliced chili peppers in a small saucepan.
Cook over medium heat for 2-3 minutes, stirring occasionally, until small bubbles form at the edges of the pan.
Remove from the heat and let the mixture infuse for 5 minutes.
Add the white wine vinegar and stir to combine.
Strain the hot honey into a glass jar or airtight container, discarding the peppers and flakes. (Optional: To retain texture, scoop out only the pepper slices and leave the red pepper flakes in the honey.)
Allow the honey to cool; it will thicken as it cools but remain slightly looser than regular honey.
Store in a cool, dry place.
