Honey Pancakes

  • 3 eggs

  • ½ cup milk

  • ½ teaspoon salt

  • 2 tablespoons oil or melter butter

  • ¼ cup powdered milk

  • ½ cup whole wheat pastry flour

  • Butter to grease pan

  • 3 large cooking apples

  • 1-2 tablespoons cold water

  • ¼ cup warmed honey

  • Cinnamon

Combine Ingredients: Mix eggs, milk, salt, oil, powdered milk, and flour together until the mixture is smooth.

Prepare the Pan: Pour the batter into a well-buttered 10-inch cast iron frying pan.

Initial Baking: Bake at 450°F for 10 minutes.

Reduce Temperature: After 10 minutes, lower the oven temperature to 350°F.

Final Baking: Continue baking for another 10 to 15 minutes, until the pancake rises around the edges and browns.

While pancake is baking, slice apples and combine with one to two tablespoons of water.

Cook apples over low heat until soft.

Spread cooked apples over the baked pancake.

Drizzle honey on top of the apples.

Sprinkle cinnamon evenly over the pancake.

Serve immediately; the pancake may fall if left for an extended period.

Try it with whipped cream!
